Yosemite Sam's Cranberry Chicken

Recommended Posts

This is for Waltzing Matilda, who lost her copy of The All-American Cowboy Cookbook, which is where this recipe comes from. The recipe is attributed to the legendary Mel Blanc, who gave voice to cartoon characters like Bugs Bunny, Daffy Duck, Porky Pig and, of course, Yosemite Sam, as well as many others.

This is one of those Sounds-Weird-Tastes-Good dishes.

1 16-ounce can whole cranberry sauce

1 envelope onion soup mix

1/2 cup creamy French dressing

2 3-pound frying chickens, cut up (or the equivalent weight of pieces of your choice)

Preheat the oven to 350°F.

Mix the cranberry sauce, soup mix and French dressing together. Dip chicken pieces into the mixture and place on foil-lined cookie sheet. Bake for about 1 hour or until done. (Juices should run clear when pieces are pierced with a fork.)

If you need to use more than one cookie sheet for this, be sure to increase the baking time accordingly.
