Honey Nut Muffins

Somebody whose email address I don't know asked me about this recipe. Hopefully, they'll see it here.


1 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon cinnamon

2 cups wheat bran (you can get this at health food stores or and other places online)

3/4 cup milk

3/4 cup prepared hot coffee

2 tablespoons butter, softened

1/2 cup honey

1/2 cup chopped walnuts

1/2 cup raisins

Preheat oven to 425°F. Spray a 12-cup muffin tin with vegetable cooking spray or use paper liners; set aside.

Sift together the flour, baking soda, salt and cinnamon into a large bowl. Stir in the wheat bran. In a small saucepan, heat the milk to scalding or just below boiling. Add the hot coffee, butter and honey. Stir until butter melts and mixture is blended. Pour over flour mixture. Stir quickly to blend. Fold in walnuts and raisins.

Fill prepared muffin cups 3/4 full. Bake in preheated oven 25 to 30 minutes. Makes 12 muffins.
