Here's a really good 9x13 cake:

Persimmon Coconut Cake with Coconut Cream Cheese Frosting

2 cups sugar

1-1/4 cups vegetable oil

4 eggs, well beaten

2 cups persimmon pulp

1 tespoon salt

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon cinnamon

2 cups all-purpose flour

1/2 cup chopped pecans

1/2 cup flaked coconut

Beat the sugar and oil well. Add the beaten eggs. persimmon pulp and remaining ingredients in order listed. Bake in a greased 9x13-inch pan in a 350F degree preheated oven for 25-35 minutes, or until knife in center comes out clean. Frost after cake has cooled completely.

Coconut Cream Cheese Frosting

1/4 cup softened butter

8-ounce package cream cheese, at room temperature

1-pound box (3-3/4 cups) confectioners sugar

1 teaspoon vanilla extract

1/2 cup chopped pecans

1/2 cup flaked coconut

Blend the butter and cream cheese well. Add sugar, vanilla, pecans and coconut. Keep cake refrigerated.

Here's another good persimmon recipe:

Persimmon Cream Cheese Pie

1 cup persimmon pulp

2 eggs

2 egg yolks

1-1/2 tablespoons all-purpose flour

1/2 teaspoon vanilla extract

12 ounces cream cheese, softened

3/4 cup sugar

9-inch graham cracker or prebaked pie crust of your choice

Combine pulp, eggs and egg yolks. Stir in flour and vanilla. Beat until smooth. In a separate bowl, cream the sugar and cream cheese. Blend into pulp mixture.

Pour into pie shell and bake at 350F degrees for 35 to 40 minutes. Remove pie, top with sour cream topping, and bake 10 more minutes.

Sour Cream Topping

1-1/2 cups sour cream

2 tablespoons sugar

1/2 teaspoon vanilla extract

Combine cream and sugar. Stir in vanilla, and mix well.

This is pudding is silky and delicious.

Buttermilk Persimmon Pudding

2 tablespoons butter, softened

3/4 cup sugar

2 eggs

2 cups persimmon pulp

1-1/2 cups flour

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cinnamon

1 cup buttermilk

1/2 cup pecans

Cream together butter and sugar. Add eggs and beat thoroughly. Add pulp. Sift dry ingredients and add alternately with buttermilk. Add pecans. Pour into greased 8-inch square pan. Bake in 350F degree oven for 45 minutes.
