Today's Recipe Of The Week: Beef Rouladen

For today's Recipe of the Week newsletter, we made Beef Rouladen, a hearty German dish that tastes delicious. It is October, and many areas of Texas still maintain a strong Texas-German heritage, like in the Texas Hill Country and San Antonio.

We cooked the rouladen using our cast-iron Lodge Dutch oven, and rolled up the meat with kitchen string, which we went to the trouble to go out and purchase beforehand. The recipe says that you can use toothpicks, and lots of other people's photos of rouladen out on the Internet show them using toothpicks, but I recommend using Butcher's string (which is just string sold in the Kitchen and Housewares store). You know having some extra string around the house is pretty handy.
