I Need Help!

Recommended Posts

I hope someone can help me!! I recently received a new smoker as a gift, and I cannot find anywhere (including the directions that came with it) on how to use it.(The directions that came with the smoker let me know how to assemble it and smoke hamburgers, but nothing else, even the comapnys website is no help.) I know how to cook brisket in the oven , but wanted to finally have a good smoked brisket. I need to know about charcoal, wood chips, cooking time and anything else anyone can help me with.

The one thing I do know (haha) is not to use the charcoal that can be lite without lighter fluid (i.e. Matchlight, etc...) I do have a bag of Kingsford Mesquite charcoal and the 10 LB brisket to cook, but no way of knowng what to do :(

OK i admit I am A Yankee that married a Texan so please help me anyway :D if you can.

The first thing you should do is read Dr. John's article, "Brisket from B to T". Here's the link: http://www.texascooking.com/features/apr99brisket.htm

John Raven knows just about all there is to know about cooking brisket. The article covers selecting the meat, marinating, seasoning, smoking, finishing, etc.

If you have specific questions, you can contact him through his column on Texas Cooking, "Ask Dr. John" at http://www.texascooking.com/askdocjohn.htm
