PapaJoe8 0 Report post Posted January 6, 2005 Hi all!This looks kinda new so I thought I had beter make a post.I have been searching years for Benny and Jimmy's chili recipes. I came close to finding Benny's in the " cowboy Cuisine" cook book by Monty Montana. The recipe was submited by one of Benny's daughters. I have heard from several reliable sorces that Benny used some type of serloin for his chili served at the Horseshoe casino but this recipe called for chuck. I had my butcher coarse grind me the ends of a serloin slab and used that along with Carrol Shelbys chili mix ( everything except no red pepper packet ), 6 cloves of garlic, extra cumin, and about 6 small caned pablono peppers ( thats it, nothing else! ). I served it to a friend who, like me, has had 100s of bowls of Benny's chili. He thought it might have even been a little better tha Benny's. Maybe he was just being real nice??? The only difference I could tell was thet the grease did not make a thin layer across the top of the bowl like Benny's did. I think Benny may have used suitt instead of the fat from the serloin end? But it WAS good!Anyone interested in Shanghai Jimmy's chili rice recipe can view the posts at the dallashistory.org forum. I haven't tried to make it yet but I will. PapaJoe8 0 Report post Posted January 8, 2005 Oh..........Add enough water to cover the meat and simmer with the lid on for 2 hours. Them simmer 1 hour with the lid off. Add more water if it needs it while cooking and to taste when almost done. Joe King 0 Report post Posted February 20, 2010 Benny's chili is no longer served at the Horseshoe. I think it was taken off the menu in 2008?
